The early French settlers of Acadie were quickly befriended by the friendly Micmac Indians who were the pioneers of teaching our ancestors how to live off the land and add to their already good cooking skills. In this picture, the beautiful Indian woman is teaching the Acadian women how to cook corn Macquechou. Exotic spices and flavorings used in basic French cooking were not available, thus the Cajuns preference today of natural ingredients such as onions, sassafras, garlic, parsley and cayenne
